乌龙茶泡奶五分钟。 Heat Oolongtea in milk over stove top for 5 minutes.
把蛋黄跟蛋清分开。 Separate egg yolk from egg white.
把油和乌龙奶茶跟蛋黄搅拌均匀然后最后加入面粉。 Add oil, Oolong milk tea and mix well with egg yolk. Then add in flour.
把蛋清加入糖跟米醋打到变亮白而挺的泡泡。 Add sugar and vinegar to egg whites and beat to stiff white foam peaks.
把蛋泡慢慢的加入面糊里搅拌均匀然后放进蛋糕模。 Slowly mix the egg white into the flour batter. Once well combined pour the batter into the cake mould.
把蛋糕模在毛巾上轻轻的撞破气泡。 Remove air bubbles from the batter by dropping the cake tin over a towel.
先放一小碗水在烤箱里,然后把蛋糕放进去。低温150度烤40分钟再180度烤20分钟。
1. 蛋清跟蛋黄一定要分的清。蛋白不能染水或油否则打不成泡。 2.加入粉以后千万不要过分搅拌因为会让面粉起根。 3.我觉得用筷子搅拌会容易把面粉搅拌均匀而防止过量搅拌。 4.放水在烤箱会帮助蛋糕升而扯保持蛋糕的柔软和绵度。 1. Egg white and egg yolk must be separated well. The egg white must not be in contact with water or oil otherwise it won't form foam peaks. 2. Don't over mix the egg yolk batter after adding in flour otherwise gluten strands will form preventing the cake from rising. 3. Stirring the egg yolk batter with chopsticks helps remove flour lumps while preventing over stirring. 4. Having a bowl of water in the oven helps the cake rise while keeping the cake moist and soft.
