Preheat oven to 325 degrees Fahrenheit (165 Celsius). Heat the cream cheese in a bowl with a drop of milk and some brown sugar.
In another large bowl, beat the oil and honey together with a whisk. Add the eggs and beat well, then whisk in the mashed bananas and milk. (If the coconut oil solidifies on contact with cold ingredients, simply rest the bowl on top of a heated surface, like on top of a heated pot with water)
Add the baking soda, vanilla, slat and cinnamon, and whisk to blend. Switch to a spatula and stir in the flour and chocolate, just until combined. Some lumps are ok!
Scoop the batter into a greased muffin pan, 1/4 full. Smooth the surface. Scoop in the cream cheese cheese filling. And then the batter again.
Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the muffin cool and enjoy!
