12/21/2024. ---- use this as REF for dough
180 g millet with 200 g water -- cook millet in rice cooker, could sub some with sticky rice
160 g cornmeal
200 g water
adjust for consistency --- sticky rice powder and tapioca powder
10 g salt
10 g baking powder
40 g oil
>> divide into portions --- should be able to make 5 trays of crackers
(1) 142 g for 15 g pork floss
(2) BBQ powder (for one tray) * 4 for the rest of the dough
BBQ powder for crackers or chips (1 large potato) ---- below is the powder for one tray of crackers
1/2 tsp packed brown sugar
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp salt. ----- Special note: if already has salt in the dough, so 1/4 tsp salt for each portion
1/4 tsp chili powder -- cayenne shouldn't be more than half, if any -- too spicy
3/4 tsp paprika (smoked if possible)
1/8 tsp black pepper
bake at 300F for 20 mins (could add 5, but may not be needed if turning off oven and leaving it in there)

basic dough for 4 trays:
cornmeal 160g、
boiling water 120g、
millet flour 160g、
salt 4g、
baking powder 4g、
cold water 80g、
vegetable oil 40g
flavor

180 g millet soaking in hot water for 2 hours or till soft
pour out some water and add 10g vegetable oil
3g salt
200 g flour or till not too sticky
150C/302F for 20 mins

步骤 1
soak millet for 2 hours in boiling water, or overnight
- mine didn't soften, so I heated up the water and cooked it a bit; still too uncooked and chewy
步骤 2
heat up water that's soaking millet, add 200 g to cornmeal, then add salt and baking powder, strain some millet in, and then add cornmeal or flour till it is a dough.
then add oil to mix in
步骤 3
divide into 4 portions
add flavoring
步骤 4
2 portions can be spread into 1 tray
bake at 300F for 28 mins, turn off oven and let it stay in for 5 mins.
- 2/2/2025: bake at 350F for 20 mins
