Arrange a shelf just abovve the centre of the oven and set it at very hot,230C. This must be done at least 15 mins before the pudding is due to be cooked to reach the correct temperature
Place a little of the fat in each tin and melt it in the oven until very hot
Beat the milk, eggs and seasoning together for 1 min with a rotary whisk or electric beater. Whisk in the flour untill smooth, then pour the batter into the hot fat in the tins. Bake above the centre of the overn for 20 mins or untill well risen and a rich golden brown
