将菠菜切段放入破壁机并放入1杯饮用水打成菠菜汁。 Slice the spinach and put it into blender then add 1 cups of drinking water to make spinach juice.

用厨房电子秤量好做饺子皮及饺子馅的材料并将饺子馅所需的食材清洗切末,把饺子馅和沾酱的调味料用量杯及量勺秤好。 Use kitchen electronic scale to measure the ingredients you need for dumpling wrapper and stuffing, clean and mince the ingredients needed for dumpling stuffing, and weigh the seasonings for dumpling stuffing and dipping sauce with measuring cups and spoons.

用擀面杖把面团擀成圆形的饺子皮,用饺子皮模具切割出一个更小的圆形饺子皮。饺子皮模具一共有大,中,小,3个尺寸,我在这里用的是中型的饺子皮模具。 Roll the dough into a round dumpling wrapper with a rolling pin. Cut a smaller round dumpling wrapper with a dumpling wrapper mould. There are three sizes of dumpling wrapper moulds: large, medium and small. I used medium-sized dumpling wrapper mould here.

用擀面杖把饺子皮再擀薄一点,这样吃起来口感好些。 Roll the dumpling wrapper with a rolling pin again, to make it thinner. It tastes better this way.

每片饺子皮为10克。 Each piece of dumpling wrapper is 10 grams.

步骤 14

用硅胶刷子把菠菜汁刷在饺子皮上,防止它变硬。 Brush the spinach juice on the dumpling wrappers with a silicone brush to prevent it from hardening.

步骤 15

将8克的饺子馅捏成两尾端尖状的椭圆形放在饺子皮中心,这样包的时候比较好包。 Put 8 grams of dumpling stuffing in the centre of the dumpling wrapper by kneading it into elliptical shape with two tips, so it is easier to wrap.

步骤 16

一次将所有饺子馅分成8克两端尖的椭圆形放在所有饺子皮上,这样包起来会比较有效率。用硅胶刷子把菠菜汁刷在饺子皮周围,防止它变硬。 Divide all the dumpling fillings into 8 grams at once and place them on all the dumpling wrappers as elliptical shape with two tips. This will be more efficient to wrap them up. Brush the spinach juice around the dumpling wrappers with a silicone brush to prevent it from hardening.

步骤 17

将饺子皮的边缘中心对折,用指腹稍微压一下将皮黏起来。如果皮黏不起来用手指沾一点菠菜汁抹在饺子皮上。 Fold the centre of the edge of the dumpling wrapper and press the skin gently with the finger pulp to stick it together. If the dumpling wrapper doesn't stick, rub a little spinach juice with your finger on the dumpling wrapper edge.

再用指腹将饺子皮左下方尾端对折。 Then fold the bottom left end of the dumpling wrapper with finger pulp.

然后把饺子皮左上端折起来。 Then fold the top left end of the dumpling wrapper.

步骤 20

再将对折好的饺子皮左上端以逆时针方向黏合在已对折的左下端饺子皮上。 Then stick the upper left end of the folded dumpling wrapper to the lower left end folded dumpling wrapper counterclockwise.

接着用指腹将饺子皮右下方尾端对折。 Fold the bottom right end of the dumpling wrapper with finger pulp afterwards

随后把饺子皮右上端折起来。 After that fold the top right end of the dumpling wrapper.

以顺时针方向将饺子皮右上端黏合在右下端饺子皮上。 Attach the upper right end of the dumpling wrapper to the lower right end dumpling wrapper clockwise.

将用饺子皮模具割出的饺子皮外围加点菠菜汁揉成面团做饺子皮,这样全部的份量刚好为36个饺子。 Add a little bit of spinach juice to the outer-rings cut from the dumpling wrapper mould and knead them into dough to make dumpling wrappers, so we get 36 dumplings.

不过我选择用抹刀把饺子皮外围切成了宽面条, 把多出来的饺子馅做成了香菇酱。 But I chose to use a spatula to cut the dumpling wrapper outer-rings into fettuccine and made the extra dumpling stuffing into mushroom sauce.

所以其实我只做了28个饺子。 So actually I only made 28 dumplings.

步骤 27

把过滤水用大火煮开,将饺子放在蒸锅里可重复使用的纯棉蒸笼垫布上。 Boil the filtered water over high heat and place the dumplings on the reusable cotton steamer pad in the steamer.

盖上锅盖,大火蒸15分钟。 Cover the pan and steam over high heat for 15 minutes.

步骤 29

蒸饺子的同时,可以制作蘸酱。把大蒜用压蒜器压碎,小米椒和葱切碎,和生抽,乌醋,花椒油,红糖,白芝麻搅拌均匀。 While steaming dumplings, dipping sauce can be made. Shred garlic with garlic press, chop tabasco pepper and spring onion, then mix with light soy sauce, black vinegar, zanthoxylum oil, brown sugar and white sesame seeds.

吃不完的饺子装在可降解的小麦秸秆饺子盒里,放入冷冻室保存。 Pack the surplus dumplings in degradable wheat stalks dumpling box and stored in a freezer.
