里脊肉切丝,拉皮处理好(详情见小贴士哦!),青椒切段,小米椒切圈,蒜姜切末。 Pork loin shredded, skin removed (see details in the tips!), green bell pepper cut into strips, small chili peppers sliced, garlic and ginger minced.
放入料酒、生抽、少量盐和淀粉搅拌均匀,腌制肉丝15分钟左右。 Mix in cooking wine, light soy sauce, a small amount of salt, and starch, and stir until well combined. Marinate the shredded meat for about 15 minutes.
凉锅热油,放入肉丝翻炒至变色盛出备用。 Heat up the wok and pour in hot oil. Add the shredded meat and stir-fry until it changes color. Remove from the wok and set aside.
锅内留油,放入姜蒜末和小米椒,炒出香味后再放入肉丝翻炒均匀。 Saute the ginger, garlic, and diced chili pepper in the remaining oil in the pot until fragrant. Then add the shredded meat and stir-fry evenly.
放入拉皮,加生抽、老抽、糖和盐快速翻炒均匀。 Put in the flat noodles, add light soy sauce, dark soy sauce, sugar, and salt, and stir fry quickly until evenly mixed.
接着放入青椒继续翻炒片刻关火。 Continue to stir-fry the green peppers for a moment and then turn off the heat.
撒上胡椒粉用余热翻炒均匀即可享受。 Sprinkle with black pepper and stir-fry evenly with residual heat to enjoy.

1.拉皮处理方式: a.拉皮切段,锅内烧开水,滑入切好的拉皮,用筷子使拉皮全部散开后即可捞出; b.用凉水浸泡一下拉皮,沥水散开备用。 2.建议辣椒选用大青椒切丝更地道,这次用的是杭椒。 3.肉丝推荐用全瘦的,肥的会有点腻。
