So good, gonna do my meal prep today Asian Salad with Chicken Thighs Ingredients: Chicken - 1 lb boneless skinless chicken thighs - salt and pepper - garlic powder - paprika - 1 tbsp butter - oil Salad dressing - 4 tbsp soy sauce - 2 tbsp olive oil - 3/4 tbsp sesame oil - 1 tsp red pepper flakes - 1 tsp sesame seeds - 1/2 tbsp honey - 1 heaping spoon of peanut butter - juice of 5 mandarin oranges - 1/2 tbsp minced garlic (fill up the garlic press once) - 1 tbsp ginger or more Salad - Spring mix lettuce - 1 cucumber - 1 red bell pepper - shredded carrots - peanuts
Directions: Chicken Pat it dry with paper towels. Season with salt, pepper, garlic powder, and paprika. Cook in a skillet with some oil. Season on the other side while it’s cooking. Cook for about 5 minutes per side. Remove chicken from pan, chop into bite-sized pieces, and return to pan with 1 tbsp of butter. Cook for an additional 2-3 minutes while mixing the chicken with the bits on the bottom of the pan. Set aside, including the cooking liquid. Salad dressing Mix all ingredients in a mason jar. Adjust if necessary to make it a liquidy viniagrette. Salad Slice veggies and assemble salads in containers. Keep chicken separate for reheating. Keep dressing separate until time to eat.
