soak dried fruits

mix make sure temp is not too high, then add butter roll till smooth

add in dried fruits ball up and rest for 30 mins (at room temp of 30C)

divide into 2 balls, degas gently (only big bubbles) tuck ends in till past center, on all sides, till a ball forms

rest for 30 mins, make sure the dough doesn't bounce back fast when pressed

roll into 2 sheets, add cream cheese in between use a fork to dock the top sheet

bake at 347 F (convection oven) for 15- 20 mins - 6/29/2024: bake at 360F for 20 min and then 365F for 6 mins
