cut up eggplants quarters, then split from the center
optional: soak in vinegar water (2 cups water + 2 tbsp vinegar) to keep it purple after steaming
in a steamer, after water is boiling, steam for 7 mins or till a chopstick can poke through
for 2 eggplants: green onion 1 garlic 2 cloves peppercorn powder 1/2 tsp chili powder 1 tsp salt 1/2 tsp sugar 1/4 tsp smoking hot oil 15g / 1 tbsp pour oil on top
add in a splash of vinegar 1/2 tsp * can add some more vinegar and salt to taste
