Creme brûlée (for 2 8oz ramekin)
125g heavy cream
125g whole milk
30g vanilla sugar
whole vanilla bean (one is enough for 6 cups)
3 egg yolks

Warm up milk and cream in a pot with vanilla
Set aside to cool down for a couple mins
Mix egg yolk and sugar
Pour the cream and milk into the egg mix through filter while it’s still hot, stir well when pouring in
Mix well and pour in the ramekins
Put ramekins in a baking pan with a wet towel
Pour boiling water into baking pan until half-ramekin height
150 Degree Celsius baking for 30min or until no fluid observed

Post baking put it on rack let it cool down until room temperature
Cove and fridge for at least 4h
45min before serving, put a layer of raw sugar on top torch until ideal level (don’t torch too much earlier)
